Nokut are produced and found throughout Xinjiang, usually mixed with cumin and pepper over cold noodles or paired with an egg in hot, vinegary broth.

As Nokut was basically the only non-mutton-non-wheat dish common across southern Xinjiang, I think I ate it almost every day while traveling (Nokuuuut!)
